Gellan Gum1] Description: Exocellular heteropolysaccharide produced by fermentation. 2] Physical Characteristics: High gel strength, high clarity, excellent film former, low use level, thermally reversible gel.
The gelling mechanism is cation induced. Ability to gel with any cation, including counterion of an active ingredient. By varying ion content and/or gel concentration, the gel texture can be easily modified.
Melting temperature can be modified to either be below or above 100° C depending on the types and concentrations of ions present.
Heat and pH stable (pH 3.5 – 10).
